Christmas Gingerbread Biccies

Happy Christmas! I hope everyone is having a fantastic day :)

Here are the gingerbread I baked and iced:

I used a gluten free mix that I made by combining 1 & 1/2 cups of brown rice flour, 1/4 cup of potato and a 1/4 cup of tapioca flours. They had a much nicer consistency then when I use plain brown rice flour. I also used treacle that I found in the supermarket because I was told it's what we call mollasses here.

Chris and I already exchanged gifts, he gave me the Kitchenaid mixer in November and I bought him a playstation game and some clothes. But I also got a Natalie Dee tshirt, it's super cute! My Mum got me a new make up bag and one of Inika's Kabuki brushes, yay! I have wanted one of these for a while now.

Enjoy the rest of your holiday celebrations :) xox

(What a fun T-shirt, too. I hadn't seen that site before... A few designs there that I now covet).

I have been wondering what treacle was for the longest time! I keep seeing it in the store and then forget to look it up.

sounds like you had a fun christmas.

Treacle is from Alice in Wonderland!

Very nice job on the gingerbreads, they're super cute.

I made gingerbread cookies this year too but I was a lot more lazy than you and just shaped them into balls. Your little men and women are so cute!

About Me

I went vegan in 2006 and it was one of the best decisions I’ve ever made. I love baking cupcakes and reading books and often wish I could combine both activities without disastrous results. If I’m not in the kitchen you’ll find me photographing food, cuddling my three kittehs or re-watching my favourite tv shows over and over again with my boyfriend. Due to food sensitivities I don't eat gluten or soy and yes, vegan, gluten free and soy free food is still delicious! Twitter: CupcakeKitteh
