Blog Challenge Week One: Classic Broccoli Quiche

So if 11 weeks of cooking from cookbooks wasn't enough, you can now join us for 11 weeks of cooking from blogs! We've decided to do blogs as they are accessible to anyone with the internet and they're free!
Week One focuses on Isa's PPK Blog that is full of fantastic recipes including some you'll find in her cookbooks.
PPK Blog Recipe #1 Classic Broccoli Quiche - gluten & soy free
You can find the recipe for this here. I subbed in white beans for the tofu and used gluten free pastry for the pie crust. The pastry is made by The Pastry Pantry and from memory the rough crust is the only one that's vegan. It wasn't cheap but I can't remember how much exactly so let's go with approx. $10. After checking their website I see it's now stocked in some Coles supermarkets too.


I followed the rest of the recipe and the filling is easy to put together. I found the pastry cracked a little bit but I was able to patch it up. I baked this for about 35 mins and for most of that time it was covered with foil as the pie crust browned quite quickly.


This is delicious! I knew as soon as I tried the filling before baking, that I would like this. It really does remind me of quiche and I used to love my Mum's quiche. I'm going to give a few slices to her and Dad to try. The flavours work so well and I think I will try turning this into a vegan quiche Loraine one day.

Good to know that white beans can be subbed! Sometimes I get sick of tofu. Yours looks beautiful!

I've never tried this quiche recipe but it's looks delicious!

I wonder if that pastry is available out here in the states or if there is something like it? hmmmmm.

That looks great! I am surprised at how well it turned out replacing the tofu with beans. That was a good idea!

How gorgeous! That bright green color just makes my mouth water, and I love how you accented it with those tomatoes. I think it is great to sub beans for tofu, what a genius idea.

Wow. I really need to try this! I've heard such wonderful things about the broccoli quiche, but I never have broccoli on hand. Have you tried the White Bean, Mushroom, and Leek Pie from Vegan Brunch? It's really good!
