VeanMoFo2011 Day 19: Viva Vegan! Cachapas and arepas

It's been 6 days since my last post on Viva Vegan! so I think it's time for another look at my favourite cookbook.

I've realised that when posting about Viva Vegan! I've started to sound like a bit of a broken record, everything I try is fantastic, delicious and amazing, apart from a few recipes. This next meal falls into the small category of recipes I didn't enjoy.

Cachapas (Savoury Corn Pancakes)
To make them gluten free I used chickpea flour and I reduced the sugar to 1 tablespoon instead of 3 because I thought these would be too sweet.

It turns out they are super dooper sweet, far too sweet for me to enjoy as a savoury meal and they fell apart really easily when cooking (this may be due to the chickpea flour instead of wheat) although I managed to get a few that held together. I served them with some avocado salsa and I don't think I'd make them again.


And now onto another meal that I enjoyed:

Columbian Grilled Arepas with Corn and Cheese
I didn't have to make any changes to this recipe and I used soy free Cheezly for the cheese. They were easy to make and I liked the addition of the corn and cheese to flavour the arepas.

Shredded Carrot-Parsnip Salad
The only change I made was to use parsnip instead of jicama as we don't get that here. I thought this would go well with the arepas and it did, I liked the contrast of the cool, sweet and tangy salad with the oily arepas.

i'd never think to use parsnip instead of jicama - so awesome, Mandee! sadface on the corn pancakes being too sweet and also falling apart. dan and i have found that everything we've made from Viva Vegan is awesome, too. it's such a wonderful cookbook! i've gotta try those arepas - yours look perfect!

I have Viva Vegan, but have only tried a few recipes. I must get on that!

I've never heard of Arepas before, but mmmmmm, they look delicious!! :)

I haven't made the arepas Colombian style. Do you have a preference between those and the Venezuelan method? BTW, they look gorgeous :)

Too bad the corn pancakes didn't turn out. I looove corn pancakes but I usually make them sweet instead of savory.

Your aprepas look perfect! Mine never looked golden brown and delicious, but I am going to keep trying. I love this cookbook!

Do the arepas split so you can fill them with stuffing? I've had them from a Peruvian food cart and they're used almost like a sandwich bun. Yours look gorgeous!
