VeganMoFo2011 Day 24: Viva Vegan! Yellow Chilli Mushrooms and Fruity Chilli Slaw


I'm still cooking my way through Viva Vegan! by Terry Hope Romero and I have another meal to share with you VeganMoFoers today.

Yellow Chilli Grilled Mushrooms with Ají Amarillo
This is a recipe I really wanted to make but it took me a while to find a jar of ají amarillo. I used mushrooms instead of tempeh and they suited this meal really well, I think mushrooms can be subbed in easily for all of the recipes involving a marinade like this. 

Fruity Chilli Slaw
I knew the mushrooms would be spicy so I thought a sweet salad would go well with them. This was really easy to throw together and I love any excuse to make the creamy chipotle chilli dressing.


I grilled some arepas and added some avocado for a really tasty lunch. The mushrooms were tender, really spicy and delicious. The salad was nice, I'm not usually a fan of sweet and savoury and I don't often eat oranges so this was a nice change for me.


I've got less than 50 recipes to go before I'm done with Viva Vegan! so I'll definitely be continuing these posts long after VeganMoFo is over for 2011!

you are kick'n booty left 'n right with the Viva Vegan! eats, Mandee! wahooooooooo! your arepas look just as lovely as they always do and the fruity chili slaw 'n yellow chili mushies both sound delightful. i love the addition of avocado, too - a combination of excellence, fo 'sho!

Your mushroom stuffed arepas look amazing! I love arepas, but I've never thought to stuff 'em with portobellas, perfect!

Wish I had time to cook through Viva Vegan. I adore it. I've made full Mexican, Columbian, and Peruvian inspired meals so far. Delish. The aji amarillo is amazing! I'm a huge fan. I think next up will be Brazil.

I love your aprepas! They always look so delicious and love how you are working your way through this cookbook because I like having pictures of recipes so I know what they look like. I can't wait to see the rest of the reicpes you cook up from Vive Vegan!
