VeganMoFo2011 Day 25: Cookbook Challenge - The Best Veggie Burgers on the Planet


We're up to week 6 of the Cookbook Challenge and the book for this week is The Best Veggie Burgers on the Planet by Joni Marie Newman.

I don't own this book because I didn't know how many recipes I'd be able to make without soy and gluten but luckily Joni has a lot of recipes available on her fantastic blog, there's a list on the right hand side.

This recipe got my attention because it's already soy and gluten free as the burgers are based on brown rice. I didn't have to make any substitutions but I did use Doongara rice as I'd cooked some the day before and had enough left to use in these burgers.

While the onions and mushrooms were cooking, I made the pesto and added the rest of the ingredients to the food processor. Once the veggies were cooked, I blended them with everything else, the mix smelt so good. I only used 1/2 cup of brown rice flour and I chilled the mix for 15 minutes.

The burgers were easy to form and held together really well while cooking. I chose to fry them because it was far too hot yesterday to have the oven on. I made mini burgers to suit my bread roll and I got 10 of them.



These burgers are delicious, I love the flavour combination of sundried tomatoes and pesto and they had a nice, soft texture.

I cut open a Schär gluten & soy free bread panini roll and I added avocado, Plamil rice mayo, tomato and baby spinach and one burger pattie plus I ate another on it's own. This was such a good dinner and now I have an awesome lunch for tomorrow too.

I'm considering buying the Kindle version of The Best Veggie Burgers on the Planet, do you have the book and if so, what's your favourite burger?

Those are the cutest burgers. I keep trying to tell myself that I don't need a book that only has burger recipes, but then I see posts like these and I immediately switch to "I totally need a book that has nothing but burger recipes!"

Oh my goodness these sound soooo good! I LOVE pesto but never thought to add it to burgers! Great!

Those look great, I'm king to keep them in mind for barbecues in the summer as I have some gluten free friends who'd love them.

The burgers look really good and the sun-dried tomatoes and pesto flavour sounds very appealing to me. I almost bought this book a while ago and now I wish I had!

Oh yum! That book sounds so delicious and that burger ... I just wanted to munch it! Are the Schar breads good? Ive only ever tried the baguette style ones. Am looking for new GF bread. Your food normally looks awesome, but that sundried tomato burger really appeals to me! Love! xox

That recipe looks fantastic. I love the idea of making smaller burgers. Almost like a slider.

I don't have this cookbook either as I wasn't sure how often I would use it. Surprising considering my cookbook addiction. I might have to "cave" in a get it.

veggie burgers are my absolute fav, Mandee - and Joni's sundried tomato 'n pesto burgers look great! i love that they're already soy-free & gluten-free - not having to tweak a recipe always makes me most happyfaced! damn, that's a good look'n burger, Mandee!
