VeganMoFo2012 Day 11: More empanadas from Viva Vegan!

This is another catch up post for me, as previously mentioned I have a backlog of photographed meals to share, today's post comes from my favourite cookbook, Viva Vegan!

Corn Crusted Pumpkin Potato Empanadas, Shredded Seitan and Mushroom Empanadas with Raisins and Olives and Peruvian Red Chilli Corn Salad with Limas and Cherry Tomatoes

We should have played a game of guess the filling but I just gave it away in the title!

Let's talk about the Corn crusted potato ones first. Being gluten free means I have only ever used the corn empanada dough recipe from VV, so that was easy enough to make. I didn't have to make any changes to the filling ingredients so these were gluten and soy free from the start.

Despite the fact that I dislike pumpkin, I still enjoyed these, though I suspect that almost any filling would taste good once inside fried corn dough! The combination of veggies and spices was great and I'd definitely remake these.

Onto the mushroomy ones. To make these gluten free I used mushrooms only and skipped the seitan and I left out the olives because I don't like 'em at all. Like the ones above, I used the same corn dough rather than the wheaty dough.

I was interested to see what I thought of the addition of raisins to a savoury dish and I have to say I didn't mind them at all, the mushroomy filling was delish, they're one of my favourite empanada fillings from VV!

And finally the salad! I used yellow corn as I've never seen white here and I cooked up some dried limas for the first time. This was also gluten and soy free.

This was a really tasty and filling salad, there was a spicy kick from the ají paste, balanced out nicely by the lime juice and agave.

I've now made all of the empanadas from Viva Vegan! so I'm looking forward to going back and repeating some of them while trying to finish making the rest of the recipes from the book as well.

Mel said...: Your food always looks so good! I've only made the seitan, raisin and olive ones and we loved them despite us not usually being fans of dried fruit in savoury food. I really must try some of the other empanadas.

and_i_say said...: I made the raisin, seitan, and olive empanadas and they were incredible! I had never considering putting the salty, savory, and sweet together like that. I made the dough and seitan a day in advance to make actual preparation easier. (I've made other empanada recipes in the past, and I know they take a bit of time with the filling and the dough.) But I should totally do it, because these look fantastic! Terry has another recipe that I tried, the tempeh pot pie, that includes olives and raisins.
