VeganMoFo2012 Day 11: More empanadas from Viva Vegan!

This is another catch up post for me, as previously mentioned I have a backlog of photographed meals to share, today's post comes from my favourite cookbook, Viva Vegan!

Corn Crusted Pumpkin Potato Empanadas, Shredded Seitan and Mushroom Empanadas with Raisins and Olives and Peruvian Red Chilli Corn Salad with Limas and Cherry Tomatoes

We should have played a game of guess the filling but I just gave it away in the title!

Let's talk about the Corn crusted potato ones first. Being gluten free means I have only ever used the corn empanada dough recipe from VV, so that was easy enough to make. I didn't have to make any changes to the filling ingredients so these were gluten and soy free from the start.

Despite the fact that I dislike pumpkin, I still enjoyed these, though I suspect that almost any filling would taste good once inside fried corn dough! The combination of veggies and spices was great and I'd definitely remake these.

Onto the mushroomy ones. To make these gluten free I used mushrooms only and skipped the seitan and I left out the olives because I don't like 'em at all. Like the ones above, I used the same corn dough rather than the wheaty dough.

I was interested to see what I thought of the addition of raisins to a savoury dish and I have to say I didn't mind them at all, the mushroomy filling was delish, they're one of my favourite empanada fillings from VV!

And finally the salad! I used yellow corn as I've never seen white here and I cooked up some dried limas for the first time. This was also gluten and soy free.

This was a really tasty and filling salad, there was a spicy kick from the ají paste, balanced out nicely by the lime juice and agave.

I've now made all of the empanadas from Viva Vegan! so I'm looking forward to going back and repeating some of them while trying to finish making the rest of the recipes from the book as well.

I love your Viva Vegan posts - they always look amazing! Apologies if this is a daft question - but do you deep fry the empanadas?

Your empanadas look perfect! I don't have Viva Vegan yet, but I'm going to have to remedy that soon and make the empanadas. Haven't been able to have them since going gluten-free.

I really enjoy raisins in a savoury dish too, my favourite salads all have raisins or grapes in. I haven't made the empanadas from VV yet but they're bookmarked!

Empanadas made with corn dough? I need to get this Viva Vegan book! I've been missing empanadas!!

Your food always looks so good! I've only made the seitan, raisin and olive ones and we loved them despite us not usually being fans of dried fruit in savoury food. I really must try some of the other empanadas.

BTW - you should try de-glutenising the Jamaican patties (similar to empanadas) in Vegan Eats World. They are so good!

Must make empanadas. Beautiful as usual! The mushie ones sound particularly wonderful.

Your empanadas look delicious but a lot of work, especially for someone like me who's never made or eaten empanadas before.

I like your reviews of Viva Vegan recipes, as I haven't had much luck yet. I want to like it though, especially that I'm a big fan of Veganomicon.

What would be your BEST recipe(s) from that book?

I made the raisin, seitan, and olive empanadas and they were incredible! I had never considering putting the salty, savory, and sweet together like that. I made the dough and seitan a day in advance to make actual preparation easier. Here's the link to my post about it: http://andisay0214.blogspot.com/2011/04/easter-holiday.html

I'm impressed by how beautiful those empanadas are! And you can't really go wrong with Latin pizza pops, ha ha. :) I love that you're cooking a bunch of recipes from this book that I haven't tried, it really just makes me want to cook the whole damn book! So good!

I was so skeptical about the raisins in those empanadas but I didn't mind them either! Only Terry could make me get over my intense hatred of raisins.

I also didn't want to make these at first because of the pumpkin. But then I wa so glad I did. I love that recipe!

Oh, they all look so good! I haven't made any of the empanadas, because they sound like so much work. (I've made other empanada recipes in the past, and I know they take a bit of time with the filling and the dough.) But I should totally do it, because these look fantastic! Terry has another recipe that I tried, the tempeh pot pie, that includes olives and raisins. I wasn't sure the mixture of those two ingredients would be good together, but it really worked to my surprise.

Damn, these looks so good! I'm sad I can't get hold of all the corn flours needed in that book.

I love empanadas! Yours look so perfect and cute! What's your all time favorite Viva Vegan empanada filling? I haven't tried them all, but the Empanadas Humitas are SO good!

I've always wanted to try empanadas and I had no idea there was a gluten-free dough recipe in Viva Vegan! I also can't believe you don't like olives! I would have put in extra :)

You've given me serious empanada envy! Those mushroom ones look amazing and I love the idea of adding the sweeter raisins to them.

Looks like a wonderful meal! The mushroom and raisin filling is quite intriguing.

Everything DOES taste good wrapped in empanada dough. I've never used the Viva Vegan filling recipes (though they look good), but just fill with whatever I have on hand instead, and I've yet to have a bad result.

Those look so good! The last time I made empanadas, I made them with this messed-up-rich crust. They might have made really awesome appetizers, but they were way too heavy to eat for dinner. Yikes! Looks like I should give that dough a try.

I love the seitan Mushroom empanadas! but haven't tried the other ones, i'll have to give them a try

I went vegan in 2006 and it was one of the best decisions I’ve ever made. I love baking cupcakes and reading books and often wish I could combine both activities without disastrous results. If I’m not in the kitchen you’ll find me photographing food, cuddling my three kittehs or re-watching my favourite tv shows over and over again with my boyfriend. Due to food sensitivities I don't eat gluten or soy and yes, vegan, gluten free and soy free food is still delicious! Twitter: CupcakeKitteh
