VeganMoFo2013 Day 19: Polenta with Red Beans


My theme for VeganMoFo this year is: MoFo Mimic! Each year I bookmark a bunch of posts intending to try out the amazing recipes fellow vegan food bloggers come up with and I don't often get around to trying them. So, this year I have made a list and I will be highlighting some of my favourite vegan food bloggers!

Jessy at HappyVeganFace has got to be one of the most positive, happy, lovely bloggers around, and I miss her posts! She also makes great vegan & gf food!

I didn't have to make any changes to this recipe, but I did leave out the black beans as I didn't have any on hand.

This was simple to whip up, you just cooked the beans and veggies while the polenta is simmering and then mix it all up!



This was so yummy, I love polenta and the beans, onion, and spices and so much flavour. I served them up with a side of the potato salad I mentioned yesterday - perfect combo!

Thanks for this delicious post. Do you know that polenta is the cheapest product at a grocery store in Buenos Aires? Everything else is expensive. I need to get some polenta for the month... it's crazy here in Buenos Aires...compared to Spain!

Jessy! I miss Jessy too! This polenta dish looks so fancy! The crispy tops look so tempting. I just saw that Sal also had a polenta post today - two of my favorite bloggers sharing one of my favorite foods! :)

I love polenta but hardly ever eat it because Mike doesn't like it unless I spend half the day making polenta fries. Your post has actually inspired me to make the polenta rancheros in Vegan Brunch! I might make that this weekend.

nice pictures! I also miss Jessy! I loved her blog and I loved her cheery comments. I really love your mofo theme, because I am always bookmarking recipes, but (honestly) I rarely get around to making them!

Ah yum! There are absolutely no beans I don't like, but red are definitely a favourite. And especially when there's some potato salad on the side!

I've made that polenta recipe before and it is really really good.

That polenta looks delish! I grew up eating corn cakes(like a pancake made with cornmeal), corn bread, grits...my grandmother was from Texas and my mom was born there so polenta became a favorite as I got older.

I've never seen polenta with beans inside. What a great idea. I like the color of the red beans in this dish. I am sure to try this out next time I cook some beans.

I made them last week and you are right: they are great! I just thought there was a little too much cayenne, but that's no big deal.
